Rustic Berry Sciscuits

A few years ago a fellow co-worker brought me this wonderful berry filled breakfast pastry from a local coffee shop. It was this yummy marriage of a scone and a biscuit = sciscuit. It's rustic, cookie/pastry shape had all of these fresh berries sprinkled throughout it. The edges were really yummy, crunchy and buttery.

I've been working on this recipe off and on since then and I think I've finally got it the way I want it. And the best part is you use frozen mixed berries, which I always have on hand. In fact, I think I have too many on hand. I keep forgetting I've bought a bag and before I know it, I've got 3 bags in the freezer. (so goes the old aged mind)

Feel free to use any kind of frozen berry you have in the freezer. It's tucked right next to the almost empty freezer burned ice cream. That's where my berries were. I think a blueberry sciscuit would be fantastic. The only one I can think of that might not work is gooseberries. Not. A. Fan. And the amount of sugar you would have to add would be a lot to those tart little berries. Fresh berries would work, but the cooking time would be different and I have to be honest, I haven't tried these with fresh berries - yet.

Subject: The clever name. Well, I thought I was being soooo original. Just google "sciscuit" and you'll see it's already a thang. But, I don't think it's trademarked, so I'm using it. Enjoy!!!

Mixed Berry Sciscuit Scone Biscuit

RUSTIC BERRY SCISCUITS

Makes: 12 Sciscuits     Cook Time: 16-20 minutes

Ingredients:
1-3/4 c. frozen mixed berries
3 T. confectioners sugar
3 c. all-purpose flour
1/3 c. granulated sugar
1 t. baking powder
1/2 t. baking soda
1-1/4 t. salt
6 T. unsalted butter (cold and cubed)
3/4 c. milk
2 eggs
1 t. lemon juice (fresh or Real Lemon brand)

Directions: 
Preheat oven to 400 degrees.

Cut large strawberries into raspberry sized pieces. (Letting them defrost a couple minutes will allow you to do this without too much effort.) This way all the berries are similar in size for cooking evenly. 

Mix frozen berries and powdered sugar together in a bowl. Place bowl into freezer while finishing up the rest of the recipe.

Mix flour, sugar, baking powder, baking soda and salt together in a larger bowl. Place cubed butter into flour mixture and cut into the flour with a pastry blender or 2 knives until butter is in pea size pieces. 

Add berries to flour mixture. Stir together lightly. Make well in flour mixture. Mix milk, eggs and lemon juice together. Pour milk mixture into well in flour. Mix together with a gentle touch. I like to use a wooden spoon for this.

Line a cookie sheet with parchment paper. Scoop large tablespoon full of batter onto cookie sheet. Slightly spread dough out with your fingers. (see below photo for size)

Bake for 16-20 minutes until a golden brown on the edges and top. Remove onto cooling rack after 1 minute.   Enjoy ~

Store in sealed container in refrigerator if not eating in next 48 hours. These frozen berries are now fresh and will mold sitting out in room temperature conditions.
